Palabok—The Popular Seafood Fried Rice Noodles of the Philippines!

Have you ever wondered what fried noodles are famous in the Philippines? Look no further! Today, I shared with my students one of the best fried noodles here, and also one of my favorites: Palabok!

Palabok is a savory rice noodle dish topped with a rich, flavorful shrimp-based sauce, generous garlic, boiled eggs, crushed pork chicharón (crispy pork rind), shrimp, and smoked fish flakes (tinapa). To add a burst of flavor, it’s finished with a squeeze of calamansi, a citrus fruit native to the Philippines, giving it that perfect tangy twist.

How’s the taste? It’s an explosion of umami goodness! Creamy, salty, garlicky, and citrusy all at once—a true Filipino comfort food.

Palabok is a beloved afternoon snack and a dish in celebrations like birthday parties, Christmas gatherings, weddings, and even festivals!
